I was kind of skeptical of the whole 'Pumpkin Cheesecake' thing, but I actually tried making it this weekend, and it turned out great! I actually found it a little lighter and fluffier than a regular cheesecake (Maybe because of the pumpkin). I have to say, the past few weeks have been insane with power outages, and people freezing in the cold. Then, those of you have have generators are stuck out in the cold waiting in long lines just to fill up your car and/or gas can. Because of all this...I had to share this with you.
